Juniper Berry

Juniper berries are the resinous cones of Juniperus communis, used to flavour game, sauerkraut, marinades, and gin. Piney, peppery, and slightly citrus, they are usually lightly crushed before cooking. Not a true berry botanically. Use sparingly—aroma is strong.
