Black Bean Sauce
Black bean sauce is a savoury paste or sauce from fermented black soybeans (douchi) with garlic and often ginger—core to Cantonese steamed fish and beef stir-fries. Salty, funky, and deeply savoury. Rinse whole beans if very salty; mash into oil to bloom. Distinct from Mexican black bean dishes.
