Truffle
Truffles are subterranean fruiting bodies of Tuber fungi that live in partnership with tree roots—oak, hazel, beech, pine and others—and are found with trained dogs (or, historically, pigs). The luxury is almost entirely aroma: garlic, honey, musk, cocoa, wet forest and spice in combinations that change by species and season. Black winter truffles (especially Tuber melanosporum / Périgord) and white autumn truffles (Tuber magnatum / Alba) anchor fine dining; summer, Burgundy, Chinese black and New World whites fill other price bands and calendars. In the kitchen, peak fruit is brushed clean, never soaked, kept cold, and used within days. Heat should open perfume—warm eggs, buttered pasta, soft polenta—not stew the fungus into mute earth. Preserved truffles, butters and oils extend the season but rarely match fresh top notes; cheap “truffle oil” is often synthetic. Good specimens feel firm and dense and smell clean and penetrating; soft, cracked, ammoniacal or waterlogged fruit is a waste of money. Wild harvest still matters, while inoculated orchards now supply much of the world’s black truffle trade.
