Tuber magnatum is the white truffle of northern Italy and a few Balkan sites, unmatched for volatile, garlic-honey, and fermented-cheese perfume that fills a room from a single fruit body. The exterior is smooth and pale ochre to olive; the interior is cream with white marbling and a softer texture than black truffles. It resists reliable cultivation, so almost all supply is wild-dug with dogs, and prices track scarcity by week. Never cook magnatum hard—heat destroys the top notes. Shave over tajarin, risotto, fonduta, or warm egg yolk at the table. Store briefly in rice or paper only as tradition allows; use fast. Pair with butter, Parmesan, and mild pasta rather than tomato or chili.
