Shaving
Truffle shaving is the classic service form: paper-thin slices cut on a mandoline or dedicated truffle shaver so maximum surface area releases perfume over warm food. The cut is done at the last moment—tableside or at the pass—because shaved flesh loses top notes within minutes of exposure. Use shavings on soft scrambled eggs, buttered tagliatelle, fonduta, risotto, or a simple roast bird jus. Do not bury shavings in long-cooked sauces. A good shaving is translucent, even, and still cold-firm; ragged wet slices signal a soft or over-ripe specimen. Hold the whole truffle until plating, then shave only what you will serve.
