Fresh Shaving

Fresh shaving means slices cut from a cold, sound truffle at service—the gold standard presentation. Each pass of the shaver should produce even, translucent pieces that perfume the plate without cooking. Do not pre-shave for a buffet hour ahead; cut to order. Good fresh shavings still feel slightly firm and smell vivid; limp, wet, or dull slices mean the fruit or the timing failed. One truffle can dress many plates if shaved thin.
