Tuber brumale is a winter-fruiting black truffle sometimes mixed into melanosporum lots, with a generally stronger, more musky-muscat and less refined aroma. The gleba can show greyer tones and the scent may include notes cooks describe as medicinal or harsh when overripe. It is edible and aromatic but usually ranked below true Périgord for fine dining. Use where a bold, rustic truffle note suits stews, strong cheeses, or oil infusions that will not showcase delicate top notes. Careful buyers separate brumale from melanosporum by expert nose and cut colour. In mixed wild bags, brumale can drag quality—or add punch, depending on intent.
