Colatura di alici is an Italian amber anchovy extract from Cetara—fish layered with salt and aged so liquid drips clear. Cleaner and more elegant than many fish sauces, with deep anchovy umami. Dress spaghetti, bitter greens, and roasted vegetables with a teaspoon. Not the same as mashed anchovy fillets.
