Sea Buckthorn

Sea buckthorn (Hippophae rhamnoides) berries are intensely tart, oily, and orange—bursting with tropical-citrus notes and natural oils. They grow on thorny coastal and steppe shrubs; juice and purée are common commercial forms. Sweeten for cordials, sauces, and desserts; pair with fish and cream. Undiluted juice is very sharp. Gloves help when hand-picking.
