Gochujang is a Korean fermented chilli-soybean paste—sweet, spicy, deep umami, and sticky. Foundation of bibimbap sauces, stews, and marinades. Bloom in oil or dilute with vinegar and sesame. Fermented complexity differs from plain chilli paste.
