Microgreens

Vegetable

Microgreens

Microgreens are seedlings of vegetables and herbs harvested after the first true leaves appear—larger than sprouts, smaller than baby leaf. Flavour concentrates the adult plant (radish heat, basil perfume, pea sweetness) in a tender stem and leaf. Use raw as garnish, salad, or sandwich layer. Snip above the soil line; do not cook hard. Sold as mixed or single-variety trays. A production style of many species rather than one botanical root—treated here as a culinary produce category cooks buy by name.
