Black Bass

Black bass usually means freshwater Micropterus species such as largemouth and smallmouth bass—firm, mild white flesh popular with anglers and in regional American and East Asian cookery. Farmed sea bass or other “bass” names on menus may be different species; true black bass is a freshwater game fish. Flavour is clean when fish are from good water and cleaned promptly. Pan-fry, deep-fry whole, steam Chinese-style, or grill fillets. Skin-on helps hold delicate flesh. Size and muddy notes vary with habitat—trim dark lateral fat if strong.
