Smallmouth bass (Micropterus dolomieu) is a cooler-water black bass with firm, white, fine-flaked flesh often considered sweeter and cleaner than largemouth from the same region. Rocky lakes and rivers produce excellent table fish when iced promptly. Size is typically smaller than trophy largemouth. Pan-fry, grill fillets, or sauté with brown butter. Smallmouth’s firmness holds together well. Prefer fish from cold clear water; avoid long livewell stress that softens texture and dulls flavour.
