Micropterus salmoides is largemouth bass—the premier freshwater black bass of North America, with mild, white, medium-firm flesh that fries and blackens beautifully. Flavour is clean when fish come from cool, clean water; muddy notes appear if held poorly in warm ponds. Sport fishing culture supplies many table fish. Fillet and fry, blacken with spice, or grill skin-on. Remove the dark lateral line meat if you want the mildest plate. Freshwater bass should be bled and iced immediately after catch for best culinary quality.
