Scorzonera
Scorzonera (Scorzonera hispanica), or black salsify, is a long black-skinned root with white flesh that tastes mild, oyster-nutty, and slightly sweet when cooked. Latex bleeds when cut—work in acidulated water. Peel after boiling or carefully before; serve like salsify with butter, gratin, or purée. Closely related in use to white salsify but a different species.
