Ramps
Ramps (Allium tricoccum), also called wild leeks, are a spring woodland allium of eastern North America with broad leaves and a bulbous base. Flavour is garlic-onion intense and green. Sustainable harvest matters—slow-growing wild patches are easily damaged. Grill whole, pickle bulbs, fold leaves into butter and pasta. Short season; freeze leaves or make pesto. Also known as wild leek—not the same as cultivated leeks.
