Pomegranate Molasses
Pomegranate molasses is reduced pomegranate juice cooked to a thick, tart-sweet syrup—essential in Middle Eastern cookery for dressings, stews, and glazes. It is a fruit molasses, not sugarcane molasses: bright acidity under dark fruit depth. Whisk into vinaigrettes, brush on lamb or aubergine, or finish muhammara. A little goes far; quality tastes cleanly tart, not burnt-sugar bitter.
