Gomme Syrup

Gomme Syrup

Gomme (gum) syrup is refined sugar syrup stabilised with gum arabic—silkier mouthfeel and finer foam than plain simple syrup in cocktails. Flavour is clean sweetness. Use where texture and foam matter more than character. Not a flavoured cordial.
