Gum arabic syrup is sugar syrup cooked or hydrated with acacia gum so it is slicker, gives finer foam, and sits in a cocktail with a rounded body. The flavour is clean sweet. Too much gum makes snot. A bar 2:1 gomme is this leaf. Simple syrup is not a substitute if the drink needs the texture.
