Rich gomme is a 2:1 sugar-to-water gomme: viscous, less ice-dilute in the tin, the modern craft default. Gum still supplies the silk. It keeps longer than 1:1. Use it where a recipe assumes rich syrup. 1:1 gomme will thin the drink.
