Yacon syrup is a dark, fruity liquid sweetener extracted from the yacon root (Smallanthus sonchifolius)—mild caramel-apple notes and a thinner pour than molasses. Popular as a lower-glycaemic café and health-food syrup. Sweeten drinks, yoghurt, and dressings. Flavour is gentle; it browns less aggressively than cane molasses.
