Dark yacon is reduced further or from more roasted juice: brown, thicker, more caramel, less of the fresh apple-root note. Some darkness is just oxidation in the pan. A darker bottle will stand up in a sauce better. If it tastes only of burnt sugar, the root is gone. Still not molasses.
