Carob syrup is a thick, dark sweetener made by cooking carob pods—chocolate-adjacent, fruity, and mineral, used in Levantine and Mediterranean drinks and desserts. It is pod extract, not cacao. Drizzle on tahini, yoghurt, and pancakes; dilute for cold carob drinks. Stronger and less one-note sweet than golden syrup.
