Levantine Carob Syrup

S tier

Levantine carob syrup (dibs kharrub) is boiled carob-pod extract: dark, fruity-chocolate, mineral, stretched with water as a drink or poured on tahini and bread. Lebanese, Syrian, and Palestinian jars are the type. It is not cacao and not grape pekmez. A spoon with tahini is breakfast. In baking it behaves like a fruit molasses.
