Sea bream groups several Sparidae, led in European markets by gilt-head bream (Sparus aurata, orada/dorade). Flesh is white, firm, and slightly sweet with enough fat for grilling without drying. Farmed gilt-head is a Mediterranean staple; wild fish can taste cleaner and firmer when line-caught. Roast or grill whole on the bone, score the skin for even cooking, and finish with olive oil, herbs, and citrus. Fillets suit pan-frying and en papillote. Japanese and Korean tables use related porgies and sea breams for sashimi and grilling. Avoid muddy-tasting poorly held farmed fish—origin and handling matter as much as species name.
