Pompano
Pompano (chiefly Florida pompano, Trachinotus carolinus, and related Trachinotus species) is a prized warm-water jack with a deep, silver-gold body, fine-grained white flesh, and enough natural fat to stay moist on the grill. Flavour is clean and mildly sweet—closer to a luxurious white fish than to oily jacks like amberjack. Whole fish and skin-on fillets both cook well; the frame is bony but the fillets are neat. Grill, pan-roast, or en papillote with citrus and herbs. Do not overcook—the flesh firms quickly. Florida and Gulf landings set the US reputation; other Trachinotus appear in tropical markets. Freshness shows in bright skin and firm belly; pompano is often expensive relative to commodity white fish and worth simple treatment.
