Permit (Trachinotus falcatus) is a larger, deep-bodied jack famous as a fly-fishing prize in Florida and the Caribbean; table use is less common than Florida pompano but the flesh can be excellent when young and fresh. Older large permit may be coarser. Not identical to pompano in shape or typical kitchen size. Treat like other firm jacks—bleed if possible, grill or roast promptly. Some markets sell small permit under mixed jack names; ask for clarity if you need true pompano for a classic recipe.
