Goat
Goat cream is the high-fat layer from goat’s milk—white, often less yellow than cow cream because of lower beta-carotene, with a clean caprine note. Yields are smaller; specialty dairies sell pouring goat cream and occasionally cultured goat crème-style products. Whip if fat is high enough; use in sauces where goat character is welcome. Pair with herbs, honey, and fruit rather than heavy chocolate. Scarcer than cow cream—check specialty and farm shops.
