Rose Water
Rose water is the hydrosol left when rose petals are steam-distilled—the fragrant water, not the essential oil. Damask rose (Rosa × damascena) is the classic culinary flower: Turkish delight, baklava syrup, Indian milk sweets, rice pudding, and a cautious drop in a lamb pilaf. Food-grade bottles should smell of fresh petals and honey, not of soap or old pot-pourri. Add it dropwise at the end; heat and a heavy hand turn it soapy. It is not rose syrup, not rose essence (much stronger), and not a handful of salad petals. Keep it dark and cool. If a bottle smells of detergent, it is either perfume-grade or tired—do not bake with it.
