The cashew kernel is the pale, kidney-curved meat left after industrial shelling strips away the caustic outer shell of Anacardium occidentale. This is the form recipes mean by “cashew”—the snack nut, the curry garnish, the piece you soak overnight for cream. Fresh kernels are ivory to cream, slightly oily to the touch, and snap with a soft crunch rather than a hard crack. They taste mildly sweet with a milky richness that deepens only lightly when raw and dramatically when roasted. Shelling and heat processing happen in specialised plants; do not attempt field-raw shells at home. Buy graded wholes when presentation matters, or pieces when you will chop or grind anyway. Quality kernels smell clean and almost dairy-like; reject yellow, translucent, or varnish-scented stock. Store cool and sealed—broken meats go stale faster than intact ones. Sort out any shrivelled pieces before making butter or paste so one bad kernel does not spoil a whole batch. In Indian and Southeast Asian kitchens the kernel is both centrepiece snack and quiet thickener once ground.
