Blanched Kernel
Blanched cashew kernels have had their brown pellicle loosened with hot water or steam and rubbed away, leaving a pale, clean meat. The colour matters for white chocolates, ivory pastes, and light European-style pastry where brown flecks would read as dirty. Flavour is slightly milder and less tannic than skin-on stock while keeping the same milky richness. Dry thoroughly after blanching so later frying, roasting, or freezing does not sputter or ice. Watch colour carefully when roasting blanched kernels—they scorch faster without the skin’s slight buffer. Blanching is not the same as roasting; each step solves a different problem. Good blanched stock is ivory-uniform and free of residual skin patches; poor stock shows grey edges, wet centres, or old-oil smell. Store cool and sealed. Pastry chefs and vegan cream makers often specify blanched kernels specifically for colour control.
