Clotted Cream

Clotted cream is cow cream slowly heated so proteins and fat form a thick yellow crust, then cooled into a dense, spoonable mass. The West Country of England—Devon and Cornwall especially—made it famous for cream teas with scones and jam. It is richer and more cooked-milk sweet than whipped double cream, and it will not whip into stiff peaks. Serve cold on scones (jam first or cream first is tribal), fruit, or desserts. A little melts into mash or scrambled eggs for luxury. Refrigerate; once the crust is broken, use within a few days. Protected Cornish clotted cream has defined milk origin and method rules.
