Cornish clotted cream is protected for cream produced in Cornwall from Cornish milk by the traditional scalding method—minimum fat rules and the characteristic crust define the PGI product. Flavour is rich and dairy-sweet; texture is dense enough to stand on a scone. Jam first then cream is the Cornish cream-tea creed. Serve well chilled. Do not whip. The protected name is not generic “clotted cream from anywhere”—origin and method matter for true Cornish pots.
