Devonshire
Devonshire clotted cream is the Devon take on scalded cow cream—a thick yellow crust over dense, spoonable cream, inseparable from Devon cream teas. It is rich, cooked-milk sweet, and slightly nutty on the crust, made by gently heating high-cream milk or cream for hours then cooling so the crust sets. Serve cold on warm scones with strawberry jam (Devon tradition often cream first). It will not whip. Look for dairy gold colour and a real crust, not merely thickened double cream. Keep refrigerated and use soon after opening; the crust softens once broken.
