Cockle shells are the ridged bivalve valves that protect the live animal. Closed shells signal life and freshness; they open when cooked. Empty shells can present picked meat or briefly scent a fish stock, but flavour yield is modest compared with crab shells. Discard cracked or foul shells. Rinse sand thoroughly if reusing for presentation. Shells are not eaten.
