Albacore offal includes heart, liver, and other viscera occasionally used in traditional and specialist cookery. Freshness is critical—organs spoil faster than muscle. Liver is rich and can be strong; heart is muscular and benefits from quick sear or confit. Most industrial and retail tuna streams discard viscera; whole-fish users and some Japanese preparations keep selected organs. Clean thoroughly; when in doubt, compost rather than risk. Not a standard supermarket item.
