Albacore liver is rich, soft, and strongly flavoured—closer to other fish livers than to calf’s liver. Only very fresh livers from sound fish should be considered; any bitterness or off odour means discard. Some traditions salt or gently sauté thin slices. Soak briefly in milk or salt water if desired to mellow, then cook gently. This is specialist cookery, not everyday tuna use. When unsure of quality, do not serve.
