Fish
Swim Bladder
The swim bladder is a gas-filled organ used by fish for buoyancy. In some Asian traditions dried fish maw (from various species) is a banquet texture ingredient; albacore is not the classic maw source. Fresh bladder has little mainstream culinary use in Western tuna cookery. Unless following a specific dried-maw tradition with proper processing, treat as discard. Do not invent snack uses for raw bladder.
