Spare-rib-end belly is the portion nearer the rib cage before full sparerib separation—meatier, with rib cartilages and a firmer bite. It bridges pure layered belly and true ribs, excellent for Korean-style grilled strips and Chinese red-braised pieces with bone flavour. Grill over charcoal with sweet-savoury marinades, or braise until the cartilage softens. Score fat, cook medium so sugar glazes do not burn, and rest briefly. Bones and cartilage add gelatin to the sauce; diners can nibble meat from the edges.
