Texture is creamy and spoonable when ripe; flavour mixes banana, mango, and mild melon with a floral finish. Some people find the aroma too strong raw and prefer it in frozen desserts. Scoop free of seeds for purees, ice cream, and mousses; fold gently into batter so heat does not destroy all perfume. Freeze pulp at peak ripeness for year-round use.
