Strip Loin

Ostrich strip loin steak is the longissimus-style portion—neat, lean, steakhouse presentation. Lean red ratite meat is mild and beef-like with very little protective fat. Reverse-sear thick pieces or grill hot; rest well. Sauce on the side. Cook hot and quick to medium-rare; there is no marbling to protect past medium.
