Ostrich fan fillet is a premium whole-muscle steak from ratite butchery—tender, lean, even thickness for pan and grill. Lean red ratite meat is mild and beef-like with very little protective fat. Sear hot, finish rare to medium-rare, rest. Overcooking past medium toughens the lean meat. Cook hot and quick to medium-rare; there is no marbling to protect past medium.
