History

Cape farming dual-purposed ostrich for feathers and later meat; liver of ostrich took a named place in that kitchen trade.

Fan fillet and oyster cuts standardised retail ostrich butchery. Cooks treated liver of ostrich as a cut with its own timing and sides.

As ostrich cookery specialised, liver was portioned and sold ready for the pan. Southern African peoples hunted ostrich for meat, eggs and feathers.
