Halved longan is shell-on fruit cracked or cut so the aril can be lifted free of the seed in one or two pieces—handy for dessert plating and quick peeling for a crowd. A thumbnail or small knife opens the shell along a natural split; twist to expose the white flesh. Use halves when you want neat arils without crushing. For drying, whole fruit is more common than halves. Work over a bowl—juice is sticky and fragrant.
