Longan fruit is the whole market berry—thin tan shell, translucent aril, dark seed—sold in clusters or loose for fresh eating and drying. Choose firm, evenly coloured shells without wet mould at the stem; heavy fruit usually means juicier arils. Shell is inedible and cracks with a gentle squeeze. Fresh fruit is chilled and peeled tableside; dried whole longans go into sweet soups and teas. Fruit does not ripen much after harvest, so quality is set at pick. Keep cool and humid to slow shell drying that shrivels the aril.
