Hard Roe

Hard roe of ling is the firm female egg sac—granular when cooked, rich and marine. Slice and pan-fry, poach whole in salted water, or salt-cure. Seasonality follows spawning; quality drops if the sac is broken or smells sharp. Serve with acid and brown butter. Do not confuse with soft milt; hard roe holds a knife cut.
