Roe

Ling roe is the egg sac of the female—firm hard roe when mature—used fresh, salted, or smoked in northern European traditions similar to other white-fish roes. Flavour is marine and rich; texture is granular when cooked. Soft milt from males is a separate, creamier product. Poach gently, pan-fry slices, or salt-cure. Very fresh roe is essential; bitterness and soft spoilage develop quickly. Availability is seasonal with spawning.
