Camel cream is uncommon—camel milk is relatively low in fat compared with buffalo, so cream yields are modest and specialty. When available, it is lighter and differently flavoured than cow cream, with a clean desert-dairy character. Use in regional desserts and experimental pastry. Do not expect whipping performance of double cream. Source from camel dairies in the Gulf, North Africa, or specialty exporters.
