Beef ribeye eye is the longissimus dorsi centre of the ribeye—tender, fine-grained, and the bulk of a ribeye steak when the cap is removed. Marbling within the eye decides juiciness; high-grade eyes stay moist even toward medium. Grill or pan-sear as steaks, or roast as a Scotch fillet-style joint. Rest before slicing. Without the cap, the plate is slightly less complex but still a classic steakhouse centrepiece.
