Dorsal

Dorsal fillet section runs along the top of the albacore toward the fin line—firm muscle, often slightly leaner than ventral flesh. Useful when you want clean, low-fat slices for searing or raw service. Slice with the grain for long pieces or across for medallions. Check for pin bones near the midline. Same mild albacore character as the rest of the loin band.
